Spanish Omelette with Saffron

At Antonio Sotos we love traditional cuisine. For us there is no dish which is a hit at the dinner table and that everyone likes so much. Yes, we’re talking about the Spanish omelette. We wanted to give our special touch to this omelette, that’s why today we have brought you a recipe for all tastes: Spanish Omelette with Saffron.


  • 5 medium potatoes
  • 4 eggs
  • 1 medium onion
  • Saffron
  • Olive oil
  • Salt to taste


Spanish Omelette with Saffron Preparation.

First of all, fry the potatoes. Once the potatoes are softened (half way through cooking), the onion is added so that the mixture does not burn.

Taking advantage that the potatoes are being fried, beat the eggs separately and add the Gourmet Ground Saffron and a little salt in a mortar.

When the potatoes and the onion are ready, stir in the saffron, eggs and salt mixture. It is best to let this mixture stand so that the aroma of the saffron and its flavour impregnate the potatoes and eggs and finally caramelise the omelette in a large frying pan with a splash of olive oil.


Today we offer in our menu a delicious and very easy dish. We know that there are people who prefer the omelette with onion and also there are also who are advocates of an onion free omelette. There’s an omelette for all tastes and preferences!  And you, what’s your preference?
