Christmas lobster, the Christmas star recipe

At Christmas our tables are elegantly dressed to host special dishes and foods that, in general, are reserved for these dates or other celebrations. Today we want you to treat yourself and if you’re inspired to prepare our Christmas Lobster with saffron sauce recipe. 

If you want to prepare this dish and not blow the entire budget on a single menu, then we recommend that you don’t wait to the last minute to buy the lobster. Buy a fresh lobster a few days earlier and freeze it properly so that it retains all its flavour. It is recommended that you use zip-lock or vacuum-packed bags to avoid oxidation.

 

Christmas lobster with saffron sauce is a feast of flavours on your palate. Go ahead and prepare this delicious, simple and exclusive recipe, we assure you that you won’t have any regrets.

 

Ingredients (4 persons)

4 lobsters

50 ml brandy

150 ml heavy cream

1 litre fish stock

50 g ground toasted almonds

2 medium onions

1 large tomato

3 garlic cloves

La Mancha Saffron

Bay leaf

Olive oil

Salt and pepper

 

Elaboration

Let’s start off this recipe by preparing the sauce. The first step is to peel and chop the garlic cloves and slice the onion, browning the garlic and onion in a frying pan with olive oil. Then, add the diced tomato and stir all ingredients well for a few minutes.

Continuing the sauce process by adding brandy into the frying pan. Cook until the alcohol evaporates and then add the bay leaf and fish stock, and leave to cook again for approximately 10 minutes. After this time, strain the sauce and set aside.

Toast 5 or 6 strands of La Mancha saffron in a frying pan and add the ground almonds, the previously prepared broth and heavy cream. Cook until obtaining the desired texture and then salt and pepper.

 

And voilà the sauce is ready! Simmer over a low heat for a minute, while preparing the lobsters.

 

Lobster is incredibly easy to make. Using kitchen shears, cut the lobster into halves, cutting the top of the lobster shell from the meaty portion of the tail, then salt and pepper and brush all over with olive oil. Grill flesh side down on a hot grill until brown, flip the lobster and cook through for a further couple of minutes. Voilá! It’s ready.

The Christmas lobster should be served hot, reason why it is recommended to serve straight from the grill to the plate. Cover each piece of lobster with the delicious prepared saffron sauce and enjoy!
