The Regulating Council for the Origin Denomination “Saffron from la Mancha” watch over the fulfilment and application of severe rules concerning quality. These rules guarantee that the saffron corresponds just to the last harvest. Besides, it is only allowed to pack the saffron in filaments, never in powder in order to avoid any kind of fraud. Maximun net weight allowed per package is 100 gr.
Mancha saffron organoleptics characteristics offer a product with a flexible and resistant apparance, whith a bright red colour stigmas, strong aroma and a dry and bitter taste.
Analytical characteristics establish a minimun colouring power of 200 units.
Packed Mancha saffron which fulfils the aforementioned especifications must be identified with the Origin Denomination “Saffron from la Mancha” label with a different registration number on each package.
Distributors and final consumers must recognize this label which is the only one that guarantees the saffron packed is Mancha Saffron and actually comes from La Mancha region, non other origins.
Many saffron dealers do not carry out the applicable regulations and sell Greek or Iranian saffron as Spanish Mancha Saffron.
