Saffron sweet potato Hummus, a healthy snack
Hummus is a traditional dish of Middle Eastern cuisine and is a healthy snack and it’s super easy to make. Traditionally, it has been made only using chickpeas, lemon juice and tahini (a ground sesame seed paste). Nowadays, there are countless versions. One of these, is this saffron sweet potato hummus version.
This snack is perfect for the youngest members of the family to eat legumes. And the touch of sweet potato imbues a delicious sweetness, which they will love. Furthermore, hummus is a dish suitable for vegetarian and vegan diets.
Recipe: saffron sweet potato hummus
Ingredients
200-300 g cooked chickpeas
2 sweet potatoes
2 garlic cloves
3 tablespoons tahini
100 ml water
100 ml extra virgin olive oil (EVOO)
2-3 saffron strands
Pepper
Ground cumin
Salt
Preparation
To make this recipe, start by roasting and cooking the sweet potatoes, then mash using a fork. Clean and peel the chickpeas. Add the cooked and peeled chickpeas, the sweet potato, tahini, saffron strands, garlic into the bowl of a food processor and gradually add the oil and water and then blend until all the ingredients are broken down and the desired texture is obtained. Add salt to taste and set aside in the refrigerator.
When serving, garnish with a drizzle of the extra virgin olive oil (EVOO) and paprika.
