Salmon with pistachio and saffron sauce

Saffron and fish are a perfect combination of flavours. That’s why today we’re bringing you a recipe of salmon with a pistachio and saffron sauce, a very simple dish to make but at the same time is a delicacy for your dinner guests, in addition to being a very healthy combination full of nutrients.

 

Ingredients:
  • 4 salmon fillets
  • 2 large onions
  • 30 g raw pistachios
  • Saffron strands
  • 200 ml dry white wine
  • 30 g butter
  • Salt
  • Pepper
  • Olive oil

 

Salmon with pistachio and saffron sauce elaboration:

First, boil the pistachios in a small saucepan with water and salt. Once the skin has softened, drain and use a cloth to peel and leave the nuts clean.

 

Attempting to remove all the possible bones from the salmon fillet. Washing the onions and whole (do not chop) bringing them to a boil for 2 or 3 minutes. Drain and leave to cool for a little while. Now is the time for chopping into julienne strips.

 

Leave to flavour for a little while longer, add the saffron strands into a glass of white wine, and this will acquire a delicious taste.

 

Now it’s time for the salmon, and for this we need to heat a teaspoon of oil in a frying pan and mixing the oil and butter. When it begins to become a mousse add the fillets into the frying pan and fry for two or three minutes depending on the taste that each person as regards the salmon. Cooking tip! Leave the salmon not as cooked as you usually like, as there is still a few minutes remaining for the fish to finish cooking whilst adding the rest of the recipe ingredients.

 

Once the time has elapsed during which the salmon has been frying, add the glass of wine containing the saffron strands to the frying pan, and cook until the alcohol evaporates completely.

 

Cook the salmon over a low heat, cooking quickly on both sides, add the onions and season to taste, leave covered and simmering for a further 4 or 5 minutes.

Just before serving, add the pistachios and add once again, a light touch of pepper.

 

Can there be a better combination of flavours than fish with saffron? In addition to being delicious, it is very healthy and simple dish to make.
