- 1 small-medium cauliflower
- 150 g mushrooms
- 30-40 g lettuce
- 1 handful black olives
- 2 bay leaves
- ¼ cup Sherry wine
- 1 tablespoon lemon juice
- ¼ cup EVOO
Wash and cut the cauliflower into relatively small florets, which can be eaten easily. Add into in a pot with cold water, laurel and salt. Bring the water to a boil and remove from heat. Place the cauliflower into a colander and pour cold water so as stop the boiling process. Set aside the boiled water for later use.
In a pot, add the sherry wine and mushrooms over low-medium heat, and bring to a boil, and then remove from the heat.
In a deep dish, add the olive oil, with lemon juice and saffron. Mix a little and set aside.

Finely chop the tomato and lettuce and add to the cauliflower. Similarly add the olives. Then add the vinaigrette and mix all ingredients well.
