Spicy Saffron Chicken Wings

If there is one meal that everyone loves day in day out, it’s chicken wings, in all its variations, with or without sauce they are always delicious, but at Antonio Sotos we go one step further and will be giving them that special touch, a tasty bitterness of saffron with that dash of spiciness will be the perfect combination so that your palate won’t forget that flavour.. Jot down this spicy saffron chicken wings recipe!


Chicken wing ingredients

  • 1 kg chicken wings.
  • 1 large jar of homemade fried tomato
  • 1 head of garlic
  • Antonio Sotos saffron threads
  • 2 or 3 chilli peppers (depending on amount of heat desired).
  • 1 glass olive oil.
  • 1 glass water.
  • ¾ glass white wine.
  • Salt.
  • Pepper.


Spicy saffron chicken wings elaboration 

The first thing is to cut the tip of the wing, wings and drummettes at the joints so that each one of the wings are separate pieces.


Peel and finely dice the garlic into very small pieces, whilst heating the olive oil in a saucepan, and cook until the wings are golden brown and cooked through. Once golden, they are cooked to perfection and can be removed from the saucepan and to continue cooking the rest of the ingredients.


In the oil in which the wings were browned, add the garlic and when they are already almost done cooked add the cracked chilli peppers to release its spicy flavour.


Now it’s time to add the wings to the oil again, the jar of fried tomato, saffron strands, water and wine. As regards the salt and pepper add to taste, or are taste the sauce mixture so that it is cooked to perfection.


Then covering the saucepan with all the ingredients and leave to simmer on very low heat for half an hour. Next lifting the saucepan lid and checking the wings so to remove them when the sauce has evaporated. Be careful that the wings don’t stick to the saucepan!


To please the little ones fry some potatoes, and even so for adults a vegetable garnish is the perfect combination to for pleasing every palate. The chicken is always very versatile for cooking meals, and for lovers of spicy cooking this recipe is delicious.
