Spicy Chicken with Almond and Saffron Sauce

 

As tomorrow, that is, 16 February, is World Almond Day, we want to pay a humble tribute to this nut, as it plays a very important role in the cultivation of our land, and similarly provides inestimable benefits to our body. Furthermore, if it is served with a delicious recipe just like the one that we are bringing you today, spicy chicken with almond and saffron sauce, a dish which will delight all your dinner guests.

 

Chicken with saffron and almond sauce ingredients

  • 1 whole chicken
  • 1 onion
  • Saffron strands
  • 2 garlic cloves
  • 2 bay leaves
  • 75 ml olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley
  • 200 ml water
  • 150 ml white wine
  • 2 handfuls of almonds

 

Elaboration directions 

Chop all the parts of the chicken and season to taste with salt and pepper in a bowl.

Heat the oil in a saucepan, and add the chicken, cook until golden brown, a sign which it is cooked through and the time for adding the white wine. Keep on medium heat so that the alcohol evaporates.

Then, add 100 ml of water with the 2 bay leaves and leave to cook. Meanwhile, place the garlic cloves, almonds, saffron strands and parsley in a mortar, and crush until obtaining a paste, without excessively large lumps.

Add the paste into the frying pan with the chicken and add the remaining 100 ml of water.

Once all the ingredients are in the saucepan, cook on low heat for a further 15 minutes or until the chicken is cooked to perfection for eating.

 

Cooking tip! If you wish to add a garnish to this delicious recipe you can do so by adding some potatoes or even rice, which will be permeated with the aroma and fragrant flavour of saffron and other spices.
