For all those who enjoy cooking, today we will give you a recipe which is ideal for summer time, although you could enjoy it all year round. Saffron Ice-cream is easy to make, this way, even the most inexperienced in the cooking art will be able to elaborate it only by taking the following steps.

Ingredients for the Saffron Ice-cream

Firstly, we need the following ingredients:

– 4 egg yokes

– 500 gr of whole milk

– 200 gr of sugar

– 40 gr of extra virgin oil

– 20 gr of ground almonds

– 1 spoonful of corn starch

Saffron threads, one teaspoon

Preparation of the Saffon Ice-cream

Once the ingredients are ready, we have to follow the steps below to prepare the saffron ice-cream:

– In a casserole, heat the milk together with the saffron threads and let cook on a slow heat for 10 minutes, stirring constantly, without letting it boil.

-Mix the sugar, the yokes and the corn starch, then add the mixture to the milk and saffron in the casserole.

– Let the obtained cream cook in a low heat (without boiling) until it has thickened so that it completely covers the back of a teaspoon.

– Remove the casserole from heat and add the olive oil together with the ground almonds.

– Stir the mixture and let it freeze for a few hours in a plastic container or an ice-cube cooler. It is necessary to stir from time to time not to have the ice-cream crystalize.

 

If you have a food processor, you can also grind the mixture to break the ice crystals and then put it back into the freezer.

 

As you can see, it is a quite simple recipe which will delight adults and children. You are recommended to serve it in cups to enjoy the saffron flavour together with the olive oil intensity.
